Ingredients:- 1 packet Marie biscuits, Little butter, 10 tsp sugar, 2 litres milk, Fruits – Mix 1/2 kg strawberries + 1/2 kg mangoes + 1/2 kg peaches, pineapple and bananas)
Take Marie Biscuits and crush it into small crumbs. You can do it by putting small pieces of Marie biscuits rolled in newspaper and roll it well, Mix 4 tsp of sugar and 4 tsp of butter in the crumbs and mix it well. Take a dish in which you will get the pudding and press this mixture on it.
Boil milk to curdle it. Add lime juice as it is boiling. Strain the water. Take the cottage cheese, add 8 tsp of sugar, a little milk and put it in the blender to make a smooth thick cream.
Now make the fruit:- Take strawberry and crush them
Add 1/2 cup sugar and cook for a few minutes and cool it.
Same method for peaches and mangoes
Slice bananas (could use Pineapple jam)
Now you can assemble the pudding.
On the base of Marie biscuits, spread 1/2 creamed cottage cheese, spread a layer of fruit and then spread cottage cream cheese on top. You can cut a few fresh fruits for garnishing. Eg – for strawberry (4-5 strawberries for slicing and decorating.)
For Cake: All Purpose Flour 1 cup
Baking Powder 1 and 1/2 tsp
Salt 1/4 tsp
Granulated Sugar 1/2 cup
Butter 1/2 cup
Eggs (room temperature) – 2
Milk – 1/4 cup
For the Filling : Cream Cheese (softened) 8oz
Granulated Sugar – 1/3 cup
Vanilla Essence – 1tsp
Fruit Topping : Variety of fruit fresh or canned
For the Cake: * Measure all ingredients into the mixing bowl, mix to moisten. Beat for 2 mins until smooth. * Pour into greased and floured 9 1/2 flan pan * Bake in oven for about 15 – 20mins until an inserted wooden toothpick comes out clean. Let it stand for 2-3 mins . Turn out onto plate to cool.
Filling: *Beat all the 4 ingredients together until smooth, spread in the hollow of flan. Chill to firm a bit. Here in case you don.t wanna use cream cheese you can make nice thick custard instead. To make custard: * take 1 litre of milk in a thick bottomed vessel …put in sugar as per your taste ( I like my custard nice n sweet 😉 ) . * take half cup milk and put in 4 heapful tablespoons of vanilla custard powder and dissolve it and keep. * once the milk starts boiling put in the dissolved custard and keep stirring until it is nice n thick.
Fruit Topping: * Any fruit of your choice, make a pattern use your creativity or use a pie filling and decorate 🙂
