Rice lovers who want to have a variety of rice-based dishes but are pressed for time; here is something for you!


Here are some quick rice recipes, which are also easy to make. Many of these dishes can also be served as one dish meal, with curds or raita and papad, Those who want to have a light rice-based meal at night generally make khichdi. Alternatively you can try South Indian specialities like Coriander Curd rice or Lemon rice, which can be prepared in a jiffy. The Chili Coriander fried rice is another very convenient rich dish, which does not even require much cutting and chopping!


Lemon rice:- Lemon rice is an all-time favorite rice preparation in South India, where it is made on a regular basis for lunch or dinner, offered as prasad to devotees at temples, served as part of a wedding spread and carried frequently in the dabba to work or school. With a holistic flavor that combines spice and tang, this rice does not need any complex accompaniments — just a papad or some crispy potato wafers would do! Combine ghee and oil in a microwave-safe bowl on high for 30 seconds. Add urad dal. mustard seeds and asafetida, mix well and microwave on high for 1 minute. Add curry leaves, green chilies and turmeric powder, mix well and microwave on high for 1 minute. Add cooked rice, lemon juice, salt along with 1 and half tbsp of water, mix well and microwave on high for 2 minutes. Serve immediately garnished with coriander leaves.

Chili coriander rice:- Quick and easy, delightfully oriental, this “chili coriander fried rice” is something you can prepare anytime, any day, as it makes use of the most common ingredients in your kitchen. It does not even involve chopping of veggies, making it perfect for those days when you get caught in a traffic jam on your way home. With pungent hints of soya sauce and garlic, fresh tints of coriander and fiery shades of red chilies, this one will send a tingle down your taste buds! So first heat oil in a broad non-stick pan, add chopped garlic a nd red chilies and saute on a high flame for a few seconds. Then add cooked Chinese rice, soya sauce, coriander and salt, mix well and cook on a high flame for 1 to 2 minutes, while stirring occasionally. Serve hot.

Coriander curd rice:- A cold bowl of this rice works wonders at times when you want something and refreshing. Steamed rice is mashed and mixed with curd into an almost puree like consistency. This is topped with a sizzling mustard seed tempering a nd a handful of chopped coriander for a healthy, yummy treat. To make this dish, mix together steamed rice, fresh curds and salt and mash well. you could also blend it slightly in a mixer to make a rough puree. Heat ghee in a small katori and add the mustard seeds. When the seeds crackle, add just a little urad dal, red chilies and hing and add this to the mashed rice curd mixture. That’s it, finally add salt and coriander and mix well. Your dish is ready.
